Premium grass-fed and finished bavette steak (sirloin flap) from The High Lonesome Ranch. This large cut (24.1oz-32oz) is a butcher's secret - intensely flavorful with a loose, open grain that soaks up marinades beautifully. Our cattle are raised on open pastures with no hormones or antibiotics.
Cooking Suggestion: Marinate in soy sauce, lime, garlic, and brown sugar for 4 hours. Grill over high heat for 4-5 minutes per side for medium-rare. Rest 5-8 minutes and slice thinly against the grain. Exceptional in tacos, salads, or served with a bold chimichurri.
