Cooking Suggestion: Season cheeks with salt and pepper, then sear until deeply browned. Braise in red wine with shallots, thyme, and beef stock at 300°F for 3-4 hours until fork-tender. The meat becomes incredibly silky and rich. Serve over creamy mashed potatoes or pappardelle pasta with the reduced braising liquid.
