RECIPE SUGGESTION: Cast-Iron Seared Ribeye with Garlic Herb Butter
- Remove steak from refrigerator 45 minutes before cooking and season generously with coarse salt and freshly cracked black pepper on both sides.
- 2. Heat a cast-iron skillet over high heat until smoking. Add 1 tablespoon of high-smoke-point oil (avocado or grapeseed).
- 3. Sear the ribeye for 3-4 minutes per side for medium-rare (internal temp 130°F). Do not move the steak while searing.
- 4. In the last minute, add 2 tablespoons of butter, 3 crushed garlic cloves, and a few sprigs of fresh rosemary and thyme. Baste the steak with the melted herb butter.
- 5. Remove from heat and rest for 8-10 minutes on a cutting board. Top with a slice of compound herb butter and serve alongside roasted vegetables or creamy mashed potatoes.
