Einkorn Sourdough loaf

Our Einkorn Sourdough is made with one of the oldest cultivated grains on earth—einkorn wheat, untouched by modern hybridization. Einkorn is naturally higher in protein and contains more minerals and nutrients like iron, zinc, lutein, and B vitamins compared to modern wheat. Its simpler gluten structure and lower starch content make it easier to digest for many people, while still delivering incredible flavor.
Einkorn’s naturally golden color and slightly sweet, nutty taste come from its high antioxidant content, especially lutein, which supports eye and overall cellular health. Because the grain is more nutrient-dense, you get more nourishment in every slice.
To balance einkorn’s naturally dense crumb, we add a small amount of organic bread flour, creating a softer, lighter loaf without compromising the benefits of this ancient grain. Finished with a long sourdough fermentation for improved digestibility and flavor, this loaf is both wholesome and satisfying.
