Premium grass-fed and finished filet mignon (tenderloin) from The High Lonesome Ranch. This exquisite large cut (16.1oz-24oz) is the most tender cut of beef, prized for its buttery texture and delicate flavor. Our cattle are raised on open pastures with no hormones or antibiotics.
Cooking Suggestion: Bring to room temperature 30 minutes before cooking. Season with salt, pepper, and a touch of garlic. Sear in a hot cast iron skillet with butter for 3-4 minutes per side. Finish in a 400°F oven for 5-6 minutes for medium-rare. Rest 8 minutes before serving with a béarnaise sauce.
